STEP 1

Choose your pizza base (see below for 3 very different options):

Stephanie Alexander’s Pizza Base – This is from Stephanie Alexander’s Kitchen Garden for children recipe book which I love! It may look like a lot of work but it’s a great hands on activity for the kids and I find they love to watch the dough double in size. Give it a go, it’s delicious!

Ingredients

½ cup of luke warm water, 2 teaspoons of instant dry yeast, ½ teaspoon of sugar, 2 teaspoons of extra virgin olive oil + extra greasing the bowl, 2 cups of plain flour, ½  teaspoon of salt + extra plain flour sprinkle on the pizza tray.

Method

  1. Put the water yeast and sugar in a small bowl, mix with a fork and leave for 5-10 mins until frothy
  2. Add 2 teaspoons of oil to the yeast mixture and mix well
  3. Put the flour and salt in the bowl of the electric mixer and add the yeast mixture
  4. Beat for at least 8 minutes until the dough looks smooth.
  5. Brush the inside of a large bowl with some olive oil and turn the dough into the oiled bowl
  6. Cover with a  clean dried tea towel and put in a still place until the dough has doubled in size (about an hour).
  7. Put dough on to a work bench and knead briefly. Shape in to a round ball, return to bowl, cover with tea towel and leave for at least 20 minutes.
  8. Scatter flour on the bench and using a rolling pin roll out the dough until it’s about the size of the pizza tray.
  9. Place on the tray, top with ingredients and cook at 200° for 15 mins until edges are crispy and cheese is bubbling.

 

Easy Preparation Pizza BaseA quicker version but it’s still homemade and still fun for the kids to make. You will still see the dough rise but it’s not as dramatic as the first pizza base recipe. 

Ingredients

Sachet of dried yeast, ½ teaspoon of salt, ½ teaspoon sugar, 2 ½ cups plain flour and 2 teaspoons of olive oil.

Method

  1. In a food processor mix the yeast, salt, sugar and 1 cup of warm water in a small bowl and cover with plastic wrap.
  2. Leave in a warm place for 10 mins until foamy, sift flour into a bowl make a well in the centre and add the yeast mixture and 2 teaspoons of olive oil and mix to a dough
  3. Preheat oven to 200° knead dough on lightly floured surface for 10 mins or until smooth and elastic
  4. Roll out the dough, place it on the tray, add the tomato paste and bake for 5 mins with no toppings
  5. Top with ingredients and bake for 30 mins or until edges are crunchy and cheese is bubbling.

No Preparation Pizza Base – If there is no time for making your own base try using pocket bread or Bazaar wholemeal pizza bases

 

STEP 2

Spread the base with tomato paste and sprinkle with fresh (or dried) basil and dried oregano and select your topping – Be creative but here are some ideas:

Rainbow garden Pizza (for little ones)

  1. Ham, grated carrot and grated zucchini, tinned pineapple pieces and fresh tomato
  2. Top with low fat mozzarella cheese

Sweet chilly chicken Pizza (for the older kids)

  1. Cut a chicken breast in to thin strips and slice an onion
  2. Spray a small fry pan with canola oil and cook the chicken and onion till golden brown
  3. Once cooked add 2tbs of sweet chilli to the chicken and onion and mix well
  4. Prepare your base as above
  5. Add the chicken mixture + sliced mushrooms, green capsicum and fresh tomato slices and sprinkle with low fat mozzarella.
  6. Once cooked top with fresh slices of avocado and fresh baby spinach leaves

Gourmet chicken and roast sweet potato Pizza (for Mum and Dad)

  1. Cut half a sweet potato into small cubes (about the size of your finger nail) spray with canola oil and sprinkle with Cajun spices and mix through 1tsp of crushed garlic (I always use the whole one and keep any extras for a salad the next day)
  2. Roast in a preheated oven at 200° for 20 mins
  3. Cut a chicken breast in to thin strips and slice an onion
  4. Spray a small fry pan with canola oil and cook the chicken and onion till golden brown
  5. Prepare the pizza base as above
  6. Add chicken and onion + slices of capsicum, mushroom, black kalamata olives and top with roast sweet potato and crumbled feta. Top with low fat mozzarella cheese
  7. Once out the oven top with fresh rocket leaves.
