Friday Night Steak and Chips

Ingredients (per person)

  • 120g of lean steak (trim fat before cooking)
  • Olive oil
  • Thyme, paprika, salt and pepper
  • ½ a long red chilli (remove the seeds)
  • Small handful of long green beans
  • Coriander
  • ¼ of an Avocado
  • 1 small tomato- diced
  • Lime juice
  • 50 g green beans
  • Oven baked chips
  • 1 potato per person – skin on cut into thick chips
  • dried rosemary and a small sprinkling of salt and pepper

Method:

Oven baked chips

  1. Preheat the oven to 200°c
  2. Wash and cut the potatoes in to fat wedges.  Sprinkle with rosemary and small amount of salt and pepper and toss with a small amount of olive oil. Bake in the oven for 40 mins and toss potatoes after 20 mins and then return to the oven.

Steak and avocado salsa

  1. Combine paprika, pepper and thyme. Brush steaks with small amount of oil and sprinkle with seasoning
  2. Cut the avocado in two, place in a bowl and cover with lime juice and coriander
  3. Trim and wash the beans
  4. Boil the kettle and cover beans with boiling water for approx 20 seconds or longer if you don’t like them crunchy
  5. Put steaks and chilli on the BBQ (med high) cook for appox 3 mins each side
  6. Top the steak with avocado salsa, serve with beans on the side
