Clean Out the Fridge Soup

This will feed the masses and then some. Even though it’s a throw together soup, there are a few essentials and every effort should be made to keep the final mix colourful!



  • 2 diced medium to large onions
  • 1kg salt reduced vegetable or chicken stock
  • 2 cans of whole tomatoes
  • Basil: 2 fresh sprigs OR 2 teaspoons of dried
  • 1 – 2 cups of rinsed, dried soup mix
  • 1 tablespoon or a decent splash of olive oil
  • Crushed Garlic: 2 fresh cloves OR 2 teaspoons of bottled

Non Essentials: Mix & Match of 1cm Cubed Vegies – don’t worry about peeling them, just give them a good rinse:

  • 1 large carrot
  • 1 red capsicum
  • 1 green capsicum
  • 1 head of broccoli (use the stalk and all)
  • 1 zucchini
  • 1 parsnip
  • Any other bits and pieces that need using from the fridge


  • 2 thinly sliced chicken breasts
  • 2 large green hot peppers


  1. Heat oil in a large saucepan and lightly sauté onions
  2. Add carrot and any other harder vegies for a minute or two
  3. Add stock, canned tomatoes, basil & garlic
  4. Add vegies (including peppers) & rinsed soup mix
  5. Add water to cover solids by about an inch and bring to boil
  6. Add sliced chicken breast and stir for a minute until meat it white
  7. Turn heat down and simmer for about an hour and a half

Add black pepper & other herbs to taste. This meal is easily frozen for lazy snacks or meals.

  • PREP TIME:         Half an hour
  • COOK TIME:       1 ½ hours
