- 1 cup of couscous
- 2 chicken breasts
- ½ a red onion thinly sliced
- 1 punnet cherry tomatoes
- 3 tablespoons sliced olives
- 1 head of broccoli
- 1 bag of spinach and rocket leaves
- Handful of fresh basil leaves, roughly torn
Dressing
Mix together the juice of half a lemon, ¼ cup of sweet chilli sauce & ¼ cup of hommus
Method
- Preheat the oven to 180°c. Wrap the seasoned chicken breasts individually in foil and bake for 15-20mins or until cooked and sliced into thin, small strips.
- Using the bowl you will serve the salad in, mix together the couscous with a cup of boiling water and cover.
- Cut broccoli in to florets and cover with boiling water for 1 min, then cover with cold water.
- Cut cherry tomatoes in half and mix together with spinach and rocket leaves, onion, olives, basil and broccoli.
- Using a fork, fluff the couscous and add the salad mix and chicken mixing well.
- Drizzle with the dressing just before serving.
