A colourful couscous salad

  • 1 cup of couscous
  • 2 chicken breasts
  • ½  a red onion thinly sliced
  • 1 punnet cherry tomatoes
  • 3 tablespoons sliced olives
  • 1 head of broccoli
  • 1 bag of spinach and rocket leaves
  • Handful of fresh basil leaves,  roughly torn 


Mix together the juice of half a lemon, ¼ cup of sweet chilli sauce & ¼ cup of hommus 


  1. Preheat the oven to 180°c. Wrap the seasoned chicken breasts individually in foil and bake for 15-20mins or until cooked and sliced into thin, small strips.
  2. Using the bowl you will serve the salad in, mix together the couscous with a cup of boiling water and cover.
  3. Cut broccoli in to florets and cover with boiling water for 1 min, then cover with cold water.
  4. Cut cherry tomatoes in half and mix together with spinach and rocket leaves, onion, olives, basil and broccoli.
  5. Using a fork, fluff the couscous and add the salad mix and chicken mixing well.
  6. Drizzle with the dressing just before serving.
