Ingredients (per person)
- 120g of lean steak (trim fat before cooking)
- Olive oil
- Thyme, paprika, salt and pepper
- ½ a long red chilli (remove the seeds)
- Small handful of long green beans
- Coriander
- ¼ of an Avocado
- 1 small tomato- diced
- Lime juice
- 50 g green beans
- Oven baked chips
- 1 potato per person – skin on cut into thick chips
- dried rosemary and a small sprinkling of salt and pepper
Method:
Oven baked chips
- Preheat the oven to 200°c
- Wash and cut the potatoes in to fat wedges. Sprinkle with rosemary and small amount of salt and pepper and toss with a small amount of olive oil. Bake in the oven for 40 mins and toss potatoes after 20 mins and then return to the oven.
Steak and avocado salsa
- Combine paprika, pepper and thyme. Brush steaks with small amount of oil and sprinkle with seasoning
- Cut the avocado in two, place in a bowl and cover with lime juice and coriander
- Trim and wash the beans
- Boil the kettle and cover beans with boiling water for approx 20 seconds or longer if you don’t like them crunchy
- Put steaks and chilli on the BBQ (med high) cook for appox 3 mins each side
- Top the steak with avocado salsa, serve with beans on the side
